WThis is an easy take on a cocktail featured on a new cocktail list. Designed as a large-volume prepared mix which is loaded with the tastes of the Christmas time, making it excellent for hosting a festive gathering. Any leftover citrus syrup you can use for morning drinks, puddings, or to mix more rounds of the drink.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Premix (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Put the listed items into a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, turn off the heat and leave to cool down fully. Pour to a sterilised bottle, seal keeping it in the refrigerator, where it will keep for about a month.
For the Premix: Pour the specified liquid ingredients into a big jug, allow it to infuse for an hour, then filter it best through muslin, so it's completely strained.
When ready to serve: Pour 85ml of the cocktail base into your stirring glass packed with ice, gently stirring lightly for one minute until cold. Strain into a cold coupe glass or a similar vessel, decorate with the cranberries and complete it by giving it a light spray with the mandarin essence above the glass.
